INGREDIENTS:
1 large zucchini (grated)
1 Egg (whisked)
1 C Almond Butter
1/4 C Coconut Cream
1/4 C Coconut Sugar
1/2 C Dark Chocolate Chips
1 t Baking Soda
1 t Apple Cider Vinegar
1 t Salt
DIRECTIONS:
- Preheat oven to 350.
- Mix ALL ingredients together and pour batter into mini-muffin cups. Do NOT overfill muffin cups. The bites will double in size.
- Bake mini brownies 30-35 minutes or until middle is firm. Let cool, before removing from muffin pan.
DONE!
NOTE: Silicone mini muffin pans work best and require no pre-greasing. Bites will pop right out. I love these.
